Carrots in the garden

Jason and I have been taking a gardening class at the church every Friday night for the last 5 weeks. One week the instructor brought a carrot that he had pulled from his garden that very day. I was surprised that carrots could last through the winter in the ground, as long as mice or other animals don't get to them...(as my mom warned me about) :)
Since spring is right around the corner we've been noticing our new green shoots coming up out of the ground. Somehow we missed digging up a section of carrots last fall in the garden so Jason pulled a few up to see what they would look like. They looked great and the kids loved gnawing on them! I couldn't believe they still tasted better than a carrot from the store. We'll have to try accidentally leaving some in the ground again next fall!
